Test of sushi knives
The sushi chef Masayoshi “Masa” Takayama was asked by the magazine New York Magazine last year (2006) to evaluate the best of the Santoku knives. Well, as a sushi chef, we expect him to be into good knives - and what the test shows is that price and quality is not necessary linked.

He tested ten knives straight from the box (no additional sharpening allowed) to chop onions, slicing boneless chicken and mincing parsley. He also tried slicing parchment paper, which is apparently his way of testing his favorite single-bevel Yanagi knife (a knife for everyday slicing, the blade is perfect for slicing long pieces of fish) after its daily session on the grindstone. He judged each of the knives for their balance, sharpness, cutting ability, and how long it kept its edge. They are ranked below in order of preference. Here is the list:

“Combining style with function the sushi board makes for a delicious and attractive presentation”. And it is pretty! It is the kind of thing you use when you ask your date over for dinner, and end up serving her or him sushi. Then I think this is the perfect gadget. This has the look and feel of high end stylish sushi bars. The Sunday Express said about it back in August 2005:

Sushi Magic
This was so cheesy that it cracked me up. It is a sushi roller! And nigiri maker. I have not tried it, so I can’t really be hard on it other than it is not the “proper japanese way” of making sushi.

Japanese Food Trade DirectoryThe latest Eat-Japan Trade Directory Vol. 3 is out. It includes comprehensive information on over 100 top quality Japanese food and drink related products, arranged by category for ease of use. It also contains a glossary of terms, as well as global distributor listing with details of around 250 companies. I think this is written and focused mainly on the UK market, but I have not seen the Directory, so I am not sure.

If you are in the food & drink industry you are lucky - you can get it free of charge (p +p extra). We are in the food and trade business, right?

  • The book concept of “Whatever for Dummies” is kind of cool. They are not very cool to have in your book collection necessarily, but as an introduction to a new field - they are quite brilliant.

    They also have two books on sushi - one that’s called “Sushi for Dummies” and the other one “Cooking around the World for Dummies”.

    Figuring out how to eat sushi politely can be confusing at first, but if you remember the tips in these books, you’re sure to display good sushi manners in a Japanese friend’s home or at a sushi bar. I also learned a bit more about the different types of sushi (I keep mixing up the names…). Following are descriptions of the different kinds of sushi from their website:

    I just finished this great book! “The Zen of Fish” is written by Trevor Corson and the author has descibed it as “documentary nonfiction”.

    The story is a mix of facts and historic reference and partly about some real students at the school I took a basic sushi class at the California Sushi Academy. It might have been a reason why I became over the top exited when reading the book, but I think the book reads like a great novel that I learned a lot from.

    I have started buying cook books on how to make sushi at home. It is a lot of fun, and the books have helped me immensely. I read them sometimes to get a certain recipe, but a lot of the time I read it just as eye candy. As if my wasabi urge is being taken care of. Sort of.

    I don’t know about you, but with me – when I get hooked on something, I am kind of an equipment and gadget geek. I love technology, so it makes me get cool stuff. I love sushi and it has made me buy a lot of new stuff. And I love it.

    It is expensive, especially since living in Norway, but I enjoy it so much. I don’t have THAT much, but I will get more – I am sure of that. I just have to get myself back to Japan…
