I love sushi flatware. This designer, Vikki Smyth, is quite special. Her approach is for from traditional Japanese. She makes food presentation and table-top sets for high end hotels (W, Wynn’s places) according to Gizmondo. Here is her signature piece, the Sushi-Ushi sushi tray, a colorful, playful sushi tray that really stands out.

One of the bad things about going to a kaiten sushi bar (conveyer belt sushi) is to see some of the plates going round and round… and round and the fish just getting sad and soggy. It must be hard for the sushi chefs to keep track of which pieces to remove from the belt at all times - serving good, fresh fish is key, but economy probably comes into play as well and you want to throw away as little food as possible.

Sustainable sushi is a buzzword these days. Trevor Corson is writing book about it, Casson Trenor has written a book about it and there are now several sushi bars that are only serving sustainable fish. Great!

Behind the website “In the Kitchen with a Southern Sushi Chef” we find a passionate sushi chef called Marisa. She went to the California Sushi Academy to study the art of sashimi, nigiri-zushi, makimono, and kaiseki under the sushi masters Toshi Sugiura and Nobuo Kishimoto. Baggett became the first African American female graduate of the school!

A good introduction into the Japanese names for different types of sushi. And a glimpse of how cool equipment they have in Japanese sushi kaiten sushi bars.

An Australian advertising agency came up with a very unique way to advertise for the sushi restaurant Sushi Roll in a crowded mall. By taking pictures of sushi and attaching them to the rails of the escalator leading up to the sushi bar, they increased walk-in visitors to the restaurant by 38%! The video shows that it also got the eye and attention of pretty much everyone going up that escalator.

Fish´n Rice is based in Denmark and has all kinds of sushi information. It is a bit confusing that the menu is in English while the content is in Danish. Well - I still understand it, but I guess a lot of you guys might not. Anyway, their sushi finder tool is still a great tool for you if you are going to Denmark in general and Copenhagen in particular - so you have a way of finding out where you can get your sushi fill there!

A lot of people are looking for information about calories and general health aspects for eating sushi. We can see that here, because our posts on calories in sushi are ALWAYS the most read (in addition to the one on naked sushi - nyotaimori…). I think this is because sushi is so yummy, that you cant stop eating it and you hope it is healthy, so you can keep up your habit…
Well - for the most part that is correct, at least for the raw fish aspect of it. A lot of the rolls and also the sushi rice itself, the soy sauce and the ginger contains quite a bit of calories… (I think we should still just decide that it is good for you; it makes you happy and is therefore healthy…)
Well anyway - Warren - the sushi guy at SushiFAQ, has updated his page on calories in sushi, a table in which you can find the type of sushi you are looking for the calorie count for.

World recession takes its toll also in the “sushi industry”. The previously reported on San Jose’s Suedy’s Koo-Ki Sushi is closing after more than 13 years of delighting foodies with whimsical handmade cookies and chocolates that resembled pieces of real sushi.

This is something within the sushi tradition that I am actually against. Ikezukuri (生き作り/活け造り) is live fish being caught, sliced and served - without being killed. So - you end up with this gaping fish on your table looking at you… It is not for me.
I have done it twice, but accidentally through ordering omakase and forgetting to let them know not to serve us that. I feel you should make sure that the fish IS completely dead before it is served. It needn’t be THAT fresh… I think it is just for the spectacle.
Because that is what it is. So - for those of you who can stomach it - here is a video of Telegraph reporter Danielle Demetriou taste tests some of Tokyo’s freshest fish…
