Fuji at Skillebekk was a place I had not heard much about. It seemed like a happening place in the neighborhood, and was quite crowded when we were there. The restaurant lies in quite a nice area and it has a sushi bar where you can sit and watch them at work. Fuji is run by Chinese, and the experience was lacking the typical japanese touch and sophistication.
We ordered the yellow tale, eel and butterfish nigiri sushi, and of course tempura maki, soft shell crab maki in addition to the spicy tuna maki and the Fuji special maki. The chef surprised us by giving us some salmon sashimi with spring onion and a mountain of gari for starters. A good start.
The yellow tale and the unagi was very good, while the butterfish was watery and did not taste much. The tempura maki was made like a futo maki (thick roll) and was quite good. The soft shell crab was the least interesting I have had in Oslo. The annoying thing about the meal was spicy tuna maki though. They mixed the tuna with a very hot spice, maybe chili. Both the texture and the hot taste was a turn off and a danger to the rest of the meal had we had more than one piece. It took a good deal of ginger to wash off that taste.
I do know that not everyone likes to eat their maki with chop sticks, using your fingers is probably considered more japanese. But I have never seen anyone eat it with knives and fork before though. Adding wasabi onto the piece of maki and then dividing up the maki using a knife and fork - that just cracked us up. We had to leave the building…
Summary:
Too expensive, sloppy presentation and minus remarks for the long hot tuna maki. Not a new favorite.

This place used to be one of the best in Oslo when it was run by Japanese.
Sadly, this is no longer the case, and the new chinese staff puts old fish in the maki rolls !!
