How to make sushi rice

The sushi rice is key in making good sushi. There are a lot of ways to make it, and most of them will end up pretty much the same. It does not really require that much, just a bit of patience when waiting for it to dry, boil, sit… Just do other things while waiting.
Ingredients
- 2 cups of rice
- 2 cups of water
- 1/4 cup rice vinegar
- 2 tablespoons of sugar
- 1 teaspoon of salt
Instructions:
- Begin by rinsing the rice thoroughly. By this you remove the cereal starch to get it as sticky as possible. Measure out the amount of rice you want and put it into a bowl. Fill it with water and wash the rice in it. Repeat this until the water is clear.
- The recipes that I have found and like all have ratio of rice and water 1:1. When making makis for two, I usually cook 2 cups of rice with 2 cups of water. Then I have more than enough. After rinsing it, I pour it in a strainer and let it sit for about 20 minutes. The rice almost dries out in that time.
- I then pour the rice into the saucepan with equal measures of water, and a small piece of kombu on top. I bring the rice and water to a boil for five minutes, then reduce the heat down to the lowest temperature and let it simmer for another 8-10 minutes. I have been trained into never removing the lid, but I am not really sure why. I then remove it from the heat and let it sit (still not removing the lid - I am good at following orders obviously…) for another 10 minutes.
- While this boils, you can make the rice vinegar mix. Take the rice vinegar, sugar and salt in a small saucepan. Heat it up while stirring until the salt and sugar dissolves. Let the mix cool while waiting for the rice.
- THEN you can remove the lid and put the rice over into your hangiri or a bowl.
- If you rinse the bowl in cold water before you put the rice in, the rice will stick less. Use a wooden ladle and pour the rice vinegar mix over the this and mix it slowly in using circular movements - so you don’t crush the rice.
- When waiting for it to cool down you can cover it with cloth, fan the rice with a piece of paper or a proper fan once in a while.
Now you are ready to make nigiri sushi and maki.
