
In 1994, Karen “Suedy” Sasaki saw an announcement in a magazine for a national cookie contest and wondered if she could come up with something to do with a cookie that had not been done before…
Then one day when she was pressing a sticky cookie mixture into a pan, it reminded her of pressing rice onto nori when she made sushi with her grandmother. That was it! A cookie-based sushi with chocolate and confections for the toppings and fillings.
Like traditional sushi - each piece of SUEDY’S KOO-KI SUSHI get their distinct flavor and texture by molding, filling and shaping the sushi by hand. They even make the little “roe” gummy eggs meticulously, one by one. Then they arrange them in o bento boxes, washi paper boxes and trays.

Strawberry flavored chocolate tuna fillet with a milk chocolate hazelnut center and a touch of green tea wasabi on a crisp rice cookie.
Mau’i maki - california maki
A pina colada flavored avocado and creamy whit crab stick wrapped in dark chocolate, crisp rice cookie and sprinkled with candy tobiko.
Great white sushi
A creamy white shrimp with smooth white almond filling atop a dab of green tea wasabi on a crisp rice cookie.
